Roasted Potatoes
Most winter squash like acorn or butternut, will roast beautifully in this method. just peel them first.4 yukon gold or red skin potatoes
olive oil (about 2 tablespoons)
salt and pepper1. Scrub and cut the potatoes into 1 inch hunks or if using red skin/new potatoes cut them into wedges like pictured above
2. Toss with olive oil, salt and pepper
3. Spread on parchment or silpat lined baking sheet
4. Roast at 400 for 35-40 minutesWe tossed a spinach salad with lemon juice, goat's feta, and roasted potatoes. Lovely with the balsamic glazed chicken.
