Feta Stuffed Chicken
Feta Stuffed Chicken Breasts
4 skinless boneless chicken breasts
1 cup crumbled Goat’s cheese or feta
¼ cup minced fresh oregano or 2 tablespoons dried oregano
½ teaspoon black pepper
olive oil
salt to taste
one lemon
1. slice breast in thick part but not all the way through. Just make a pocket along the outside of the top thick part
2. heat pan over medium heat
3. combine oregano, cheese, and pepper
4. stuff cheese mixture into chicken breast
5. oil pan and lay breasts flat, what would have been the skin side down first, on the surface of pan
6. do not touch for 7 minutes
7. flip breasts, turn heat to medium/low, and cover with lid for 10 minutes
8. test with thermometer for 160 degrees in thick part of breast
9. remove chicken from pan and salt and pepper the breasts
10. squeeze lemon juice in pan and stir up brown bits. Spoon 1 tbsp of sauce over chicken and serve
